So I made the mistake of posting this little picture on Instagram the other day, and a few people wanted the recipe :)
I give you............my mom's Cheeseburger Pasta. This was without a doubt my FAVORITE meal growing up. Josh was out of town for work this week, so mom made it for me! I felt special :)
Here is what you need (this serves roughly 4 people, but not enough for seconds):
-1 1/4 lb. Ground chuck
-Shredded cheddar cheese (or whatever cheese you prefer)
-Box of pasta (we used whole wheat)
-Ketchup
-Mustard
-Pickles
-Sesame seeds
-Boil your pasta (just follow the box directions).
-Brown the meat.
-While you are waiting on the pasta and meat, you can prepare each plate. Mom always took ketchup and mustard and put them directly on the plate in the shape of an X or a cross. She loaded it up for me because I really love ketchup and mustard. You choose the amount.
-Slice your pickles to bite sized pieces.
-After the meat is cooked, go ahead and sprinkle cheddar cheese over all of it. Again, you can choose your amount. If you love cheese, go heavier. If not, go lighter. Then, put a lid on the skillet that you use and leave the lid on top until you see your cheese melt into the meat.
-Drain your pasta.
-Go back to the plates that you started with that already have the ketchup and mustard on them, and put the pasta on top of the ketchup and mustard. Next, layer with the meat, then throw a few pickles on there, and sprinkle with sesame seeds.
This is the eastiest, most delicious recipe ever! There are no real exact measurements, and you could add or take things out that you do or don't like. For instance, my mom mixed ketchup and mayonnaise together and then put that at the bottom of Trey's plate since he loves that combination! Tweak it to your liking!
Lastly, please go check out my dear friend Ashley's new blog, perchblog.com. You will love her and her ramblings. Ashley has been a dear friend of mine for the last year and a half since I got married. I count her a huge blessing because I met her right about the time I married Josh, and she has become such an important friend and role model in my life. She is married to a talented painter, Stephen...and you will find some of what they do on her site :) Go check it out! I love her!!! Then, when you're done with that, go whip up some cheeseburger pasta. We will probably be best friends after you do this. Let me know if you try it, and what you do that makes it uniquely yours!
Have a great Thursday. It's Friday Eve :)

Golly, I love you too. I missed these posts, somehow, some way, and I'm glad I did. It was kind of like finding $ in the dryer!
