Foodie Friday Link-Up Party!


Hey Bloggies!!!!

Today, I am joining my girlfriend, Magan, over at A Touch of Class for her first link-up party, Foodie Friday! I have never joined a link-up, so I am pretty excited about learning some new recipes or hearing about some sweet restaurants. The foodie in me is smiling as I type!!!

Today, I thought I would share with you a REALLLY EASY RECIPE that you probably already make. It is one of my husband’s favorite meals, it is SUPER EASY to make, you can make it ahead if you want and freeze it, and it is just DOWNRIGHT GOOD! I got this recipe from my good ol’ MIL, so I will give y’all the recipe which is technically hers, but with my modifications! This recipe looks like it calls for a lot of ingredients and steps, but I promise you it is SO EASY!

Chicken Tetrazini
You need:
-1-2 lbs. chicken (I buy a Publix or Costco rotisserie chicken and just pick it apart. Since us Downing’s are meat eaters, I use the whole chicken)
*Get your rotisserie chicken from Costco if you can. They have super cheap rotisserie chickens right around $3.99.
-2 cans cream of mushroom soup
-About ½ a cup of half and half. Eyeball it until it’s creamy basically
-2 tablespoons of butter (3 tablespoons if you love carbs…HOLLA)
-1 cup of chicken broth
-1/4 lb. of spaghetti cooked (this is one small box if you want to just buy a small box)
-1 small can of mushrooms, if you and your family aren’t mushroom people; you could cut them out altogether. If you are a mushroom freak, go ahead and use a big can!!
-12 ounces of grated cheddar cheese
-Salt and pepper

-Combine butter, soup, half and half, seasonings (salt and pepper to taste), and chicken broth and heat it all together.
-Cook spaghetti in water or chicken broth. I have used both methods and find that this dish is way too salty if I cook the spaghetti in the broth. This is your preference!
-Spray down a 13x9 with some pam. Layer: Spaghetti, chicken, sauce, and cheese. Cover with aluminum foil. Bake at 325 degrees for 45 minutes.
-Remove foil, and bake for an additional 5-7 minutes to melt the cheese!
ENJOY!!!!!!!!!!!

-You could make this ahead of time and freeze it until the day you want to cook it. I’d let it thaw for about 30 minutes and then just pop this jank in the oven!!!

This goes out to the tall girls!!!

I have a QUESTION! Are any of you girls out there kind of TALL? Anyone have a long torso? Am I THE ONLY ONE who can’t go to all of these cheap, trendy stores to find clothes due to looking like a baby prosty? Seriously, I’ve tried Forever 21 a million times. I’ve tried Wet Seal. I keep dreaming all of their hems will be about 4” longer then any of them are. I am tired of forcing these short dresses with leggings or jeans just to make them work. What ends up happening is I force myself to go in and try things on, and then I leave literally UPSET about my body and start thinking that I will NEVER find clothes that fit my body type the correct way for an affordable price. I don’t want to spend $90 a piece on casual dresses and $60 on tees. I also can’t handle buying shirts that barely cover my belly button. I know I CAN’T BE THE ONLY ONE out there with this problem. I am not writing this to bash the cute, trendy stores either…they just don’t work for me! With that said…tall girls, I need your help! Where should I go? I NEED some new clothes, and I’m feeling pretty discouraged. ANY advice is golden? Lastly, I’m not that big with online shopping when it comes to clothing. I am one of those people who has to try things on!

Need a pick-me-up?

Sometimes, we just need a little encouragement. This verse always touches me to my core:

"'For even if the mountains walk away,
And the hills fall to pieces,
My love won’t walk away from you,
My covenant commitment of peace won’t fall apart.
The God who has compassion on you says so.” (The Message)

This verse does something special for me. It reminds me that no matter what I'm going through, which is usually a COMPLETE MINOR...God LOVES me. He cares for me. He won't ever walk away. When I feel like everything is falling apart, He is holding it all together. When I am tired, He is ready to help me rest. When I'm down, He understands and has complete and utter compassion towards me (even though it is undeserved). How sweet is this truth? There's really nothing more that I need to meditate on when I'm down. When I start concentrating on this for a few moments, I instantly feel the weight melt right off my shoulders.

I want to share a sweet story with y'all really quick. A few months ago, my mother-in-law "randomly" sent me this verse. I actually didn't have a chance to read it, so I quickly searched the reference and printed the verse out at work. I left work a little early that day and never thought about it again. Later, my brother who was also working with me at the time, posted a picture of this bible verse on Twitter. It was a picture of a piece of paper with the verse sitting on printer waiting for him at work. He had printed something and when he went to go grab his sheet off of the printer, this verse was sitting there waiting for him instead...it was almost as if it were a direct gift that God left sitting there for him! How cool is that? God used my mother-in-law, who was trying to encourage me to also encourage my brother. I love the way God works.

With that said, I'm not sure why I am posting this today. This has been one of my favorite verses for a few months now, but obviously, someone out there needs to read this TODAY, just like my brother and I did!

Sassy Date Night-Monday Mornin' Blues!

This morning, I decided to check out Polyvore. I didn't really understand what this website was all about until this morning, but I can see where this website would be another addiction/time waster! I am not a huge fashionista by any means, but I created this simple, little date night outfit. As I created this, I realized the dress costs $813....YIKES! The only thing I DON'T like about this website is that even if you create this KILLER outfit, you still don't own it. Not to mention, the outfit that I created was freakishly expensive...but, it is fun to put stuff together. MIA Update-Glad to be back!

Hey there, bloggies!

I have been MIA for almost one month now! I’ve still been reading my favorite blogs everyday; If I’m being completely transparent though, I have been in a bit of a blog-writing rut. Between work, commitments, family, and friend time, I just haven’t had a whole lot of energy. The good news is that I am back to blogging and feeling rejuvenated and refreshed!

Here’s just a little update of what I’ve been up to the last few weeks! I’m so excited to be back!

I made this delicious tuna bowl a few weeks back for dinner. It was super easy, but the fish was a bit expensive b/c I bought it fresh last minute at Publix. You can find my inspiration for this recipe here on one of my favorite blogs, ValSoCal. She has such a sweet style, and I love her recipes!

Then, one day my great girlfriend, Magan posted a guilt-free banana ice cream recipe, so y’all know I had to try it that night! It's super easy and super delish if you are in a fruity, chocolate mood. You can check out her post here at her blog: A Touch of Class!

Here, you will see my attempt of the cute, front braid everyone is sportin’ right now. My thoughts: LOVE, LOVE, LOVE this look, but I’m not so coordinated to do this myself everyday. This was the 5th attempt, and I was getting frustrated. My hands were not made to braid my own hair.

I FINALLY got my diploma after ALL of the drama that went down with my graduation. Yes, I have waited to receive this piece of paper since I walked in December of 2010. That's 8 months, peeps.

So, my husband randomly decided to take up golfing. By golfing,I don’t mean let’s start hitting balls once every few weeks. I mean, let’s go EVERY time we have free time. Here are a few pics of his, my brother’s skills, and our friend Kevin. I am also planning to take up this sport with them as well, but I don’t have clubs and I shank every time I swing. I should also state that I dated a golfer my sophomore year of high school, so mom and daddy got me golf shoes that Christmas because I went to the driving range with him all the time. I’M JUST THANKFUL I FOUND MY NEVER WORN SHOES (DUE TO OUR BREAKUP, HA) AND LOOK THE PART…EVEN IF I DO NOTHING BUT TAKE PICTURES WHEN WE GO!
Take note of my brother...and also my lovely shoes! Hahahaha!

I am just now getting around to decorating our bedroom. We are in the process of selling our townhome, so I really haven’t done a whole lot to our house; I am trying to wait until we move. I finally had enough of our bed looking grungy though, so I got these adorable pillows at West Elm last week with the help of my mom and awesome grandma. The awesome surprise was that my grandma ended up buying all of these for me as a delayed Christmas present that I had no clue I was going to receive when we headed up to West Elm!! She has such a sweet heart, and now I love making our bed! SCORE! PS-West Elm was having a great sale. You can check out these same shams and their sale here!
PS-This is pretty much just Phase 2 of our room. When we move, the walls will be grey and I will be getting the black nightstands that match our bed instead of using my old white one from my room back at home!

Monday night, a few of my girlfriends and I had a last minute “girls” night, I guess you could say. Sorry, not a big fan of saying “girls night”…feels super cheeseball to me. We were in the mood to craft and paint. Some of us are more talented than others (um… Car, Bri, and Dev)…some of us aren’t (um…me). We still had a blast though! Also, I just noticed that my 3 girlfriends all have cute abbreviations for their full names…mine would be “Bro”…not so cute.

I copied something that I have been swooning over on Pinterest. Mine is a little sloppy, so it won't be hung in the house...I'll probably bring it to my desk at work!

I got this adorable frame at Hobby Lobby for $8. I got another one that is similar to it for J's side of the bed. They were both white, and I sprayed them grey! I also got the letter "B" and "J" for $2.99 each at Hobby Lobby (my favorite store). Lastly, the owl is from West Elm and the lamp and lamp shade are Target finds!

Yesterday, I had a very loaded day. It started with me making an awesome crockpot chicken recipe that I found over at The Larson Lingo! Sorry, I don’t have a finished picture.
I highly recommend this recipe, but I would shred the chicken in the crockpot before serving and let it sit another 30 minutes so the chicken absorbs more juice. Mine was a little dry.

Then, I got to work and decided to check my old email address that is usually filled with spam. When I logged in, I saw that I had a ton of emails from YouTube. I completely forgot that J and I’s proposal video is still up…we have somehow reached 14,500 views. Craziness…so I watched that again and teared up. Good stuff…you can checkout the video here:

Lastly, the night ended with us going to see the double feature of Harry Potter. I did not follow this series until just recently when we watched all of the movies over the last few weeks. My family has been obsessed with these for years now…I have a few friends who are also obsessed. I had been refusing to jump on this bandwagon FOR YEARS, but you know how it goes. You finally give in….you get sucked in….you end up at the theatre from 7pm-3am with all of the crazies in costumes that are crying during the end of the movie due to the bittersweetness (word I made up) of an incredible, epic ending to an amazing saga. I have to say I loved it, but I was exhausted. I may or may not have taken a 30 minute catnap and been elbowed by J and T due to snoring loudly during the movie…………………………………….yes, I hit an all time low at the age of 80. I will be starting the books this weekend.
For the record, I have never seen the theatre this crowded, with all concessions open and lines galore...
