Halleluyerrrr for Foodie Friday…..heeeeyyyyyy!

Today, I’m sharing not one, but TWO recipes. GO BIG OR GO HOME. That is my motto today. We just ordered Cheesecake Factory in the office, and pops/bossman is treating! I’m a bit EXCITED right now! Also, I am surprising the husby with SUPER fun plans this weekend, so I am just an ecstatic little bee!
I’m gonna start with the sweets first. Why, you ask? Because it is the most important recipe of the day. Like I said…GO BIG OR GO HOME.
German Chocolate Cake (DO NOT LET THE NAME FOOL YOU. There ain’t NOTHIN weird about this jank. If you are a chocolate lover…..you’re gonna die!!!) This is my mom's recipe, and I grew up LOVING THIS!!!!!!
You need:
-13x9 pan
-1 cup of pecans, chopped (I like them pretty fine)
- 3/4 cup of coconut (if you aren’t a coconut lover, I would do 1/2 cup instead)
-Devils food Chocolate Cake mix
Directions:
-Make Devils Food Chocolate Cake Mix like normal
-In a 13x9, scatter/spread your pecans all over the bottom of the pan so the pecans are evenly dispersed
-Then, do the same with the shreds of coconut on top of the pecans
-Next, pour the cake mix on top of the nuts and coconut
-Let this sit a minute
-In a sauce pan on low/medium:
-Melt a stick of butter and 8 ounces of cream cheese together (let these two melt together really good first)
-Slowly pour and stir in 3 cups of powdered sugar
-Zigzag this mixture on top of your cake mix so that you get it in all different sections of your cake
-Go back with a spoon and smooth some of this mixture around the edges (no one likes a corner piece without the good ol’ mixings)
-Bake on 350 for 45 minutes (may vary depending on your oven, so watch it around 40 minutes)
***Allow me to let y’all know that this cake is heaven. It is SO moist….something about that cream cheese zigzagged all over is HEAVENLY!
NEXT UP…..BBQ Pulled Pork Sandwiches (EASIEST recipe ever)
An ideal night for me would consist of this recipe and then a piece of the german chocolate cake after. Why? Because this is a crockpot recipe so it is easy peasy and delicious. J-Dub, my hubby dub LOVES my pork sandwiches. He says they’re better than any restaurant.
PS-I can’t take all of the credit, because I scored this recipe off of melskitchencafe!
You need:
3-4 lbs. boneless pork shoulder (or pork loin)
-1/4 teaspoon fresh ground pepper (I eyeball the salt and pepper b/c we usually like more than most recipes call for)
-1/4 teaspoon salt
-2 cups water
-1 tablespoon hickory flavored liquid smoke (I usually do 1 ½ tablespoons cuz I LOVE me some FLAVOR)
-2 cups BBQ sauce (again, I sort of eyeball this…you’ll know what I mean when you make this as well)
Now, here’s the directions STRAIGHT from melskitchencafe:
Rinse the pork shoulder and pat dry. Rub salt and pepper over the pork and place in a slow cooker. Add water and liquid smoke. Cook on low setting for 8 to 10 hours, until the pork is very tender.
Remove the pork from the slow cooker and discard the remaining liquid. Shred the pork using a couple of forks. Place the meat back in the slow cooker along with the barbecue sauce and continue to cook for another 20-30 minutes until the pork is hot again. Serve on buns with extra barbecue sauce.
***One additional item that I like to add when I’m in the mood for a unique combination. SLICED PICKLES. Sometimes I love the combo of a pickle and BBQ sauce.
